Okan Dilek’s path to opening Big Mama is anything but conventional. “I am from Turkey. I graduated from a music university in my home country and worked as a musician for many years,” Okan shares. His career took a turn when he moved to Sydney, Australia, ten years ago, where he explored his passion for cooking while working at an Italian restaurant and delving into artisan bread-making. “Cooking and experimenting with different methods was always a passion of mine,” he says.

A New Chapter in Cambodia

The dream of owning a restaurant remained a constant for Okan, even as he ran a software company in Turkey during the pandemic. After selling a successful mobile health app, he decided to pursue his culinary dream. “I searched for the right country and discovered the beautiful country of Cambodia,” Okan explains. In December 2023, Big Mama opened its doors in Phnom Penh, steadily building a team that now comprises 15 dedicated individuals.

Big Mama’s menu is a testament to Okan’s commitment to quality. “At Big Mama, we use top-quality products. For example, our dough undergoes cold fermentation for 36 hours, which enhances both the flavor and digestibility,” Okan reveals. The attention to detail extends to their tomato sauce, made from imported San Marzano tomatoes, and other key ingredients like pepperoni and mozzarella cheese, which are also sourced from Italy. This dedication to high-quality ingredients sets Big Mama apart in the local food scene.
